My favorite meal is porotos con riendas, principally porotos hallados. This is a kind of legume, a bean with stains and a more intense flavor than normal beans.
I cooked this meal with onion, squash, garlic, spaghetti, salt, and pepper. I do this meal, three or four times in a week. Cooked them is simple:
With soaked beans from the night before, cooked in low fire for twenty minutes, while that is cooking, I shop the onion and garlic, and spice it up with pepper and salt. And fry the onion until is soft.
Add the fried onion and spaghetti in the cooking pot with the beans, add squash and cook it for twenty more minutes, correct the spices and serve it. I like to mix it up with spinach, it is very delicious!
This meal is very healthy, because provides the proteins that I need and other macronutrients and vitamins. The spaghetti added is just the carbohydrate portion for a day.
